Yes, you can use tortillas. Just soften them over heat before putting them in the pan.
You could try sugar-free graham crackers, held together with sugar-free jam that has been heated in a microwave.

They make some super-size tortillas that might work ???
but to buy a pkg @ $3 - 4 .00????
look for the new Pillsbury Rolled pie shells they are delicious..

There is more sugar in the apples .
There is NO sugar in pie dough..
